Poached Pears

Ingredients:  F  W  V  B  Gf

(serves 4 people)  

  • 4 organic Bosc pears
  • 1 cup of red wine
  • ½ cup organic sugar
  • ½ cup of water
  • 1 pinch of cinnamon
  • 5 or 6 cloves
  • 2 oz. of dark chocolate

Wash the pears and peel them. Choose a saucepan tall enough for the pears to cook standing up. Warm up the water and wine, add the sugar, cinnamon and cloves, and bring to a boil, stirring to dissolve the sugar.

Lower the heat, add the pears and cook – uncovered – for 10 minutes. This way the alcohol in the wine will evaporate. Cover and cook for 20 more minutes.
The pears are ready when they are still firm but not mushy, so after 15 minutes test them at the bottom with a fork.
If the liquid in which the pears have been cooked is not thick enough, remove the pears and let boil – uncovered – until it becomes like  syrup.
Serve warm or cold, pouring some cooking syrup over the pears and grating some dark chocolate on them.
