Green Sauce

Ingredients:  F  W  V  Df  Ef

(serves 4)  

  • 6 Tbsp. of minced parsley
  • 1 clove of garlic
  • 1 oz. of bread
  • 2 Tbsp. of tomato sauce (see recipe)
  • 3 Tbsp. of red wine vinegar
  • 3 anchovies
  • 1 pinch of salt

Remove the parsley leaves from the stems and wash them.
In a small bowl, soak the bread crumb in vinegar.
Chop together parsley, garlic, and anchovies in a small food processor. Transfer into a small mixing bowl.
Put the soaked bread in a mesh strainer and squeeze out the vinegar. Add it to the other ingredients in the bowl, together with the tomato sauce. Stir well.
Serve with white or red meats.
