Cod with leeks

Ingredients:

(for 2 people)   A  B  Gf

  • 4 pieces of frozen or fresh cod, approx. 10 oz.
  • 2 leeks (only the white part, cut in rounds)
  • Some Italian parsley (chopped)
  • ½ glass of dry white wine
  • 4 Tbsp. of EVOO
  • Salt (to taste, optional)
  • Pepper (to taste, optional)

Sauté the white part of the leeks in the extra-virgin olive oil in a medium pan. Rinse the cod and pat it dry. Add the cod to the pan and cook it for a couple of minutes on each side. Add the white wine, let evaporate the alcohol for about 30 seconds and cover with a lid. Add salt and pepper to taste and cook on medium heat for five minutes, then uncover to let evaporate any remaining liquid (if any is left). Sprinkle the chopped parsley over the cod and serve hot.

P.S. This recipe goes very well with steamed Swiss chard and steamed golden potatoes.
